Description

Soffocone is produced exclusively with grapes from the vineyard
of Vincigliata, in Fiesole, characterised by a perfect exposure that goes from
southwest to south and from a soil rich in Galestro. All these characteristics
combined they give the wine its main notes of elegance and freshness,
which are enhanced thanks to the winemaking process. Fermentation and
the aging was carried out in large 30Hl barrels. The fermentation
is carried out with indigenous yeasts and without temperature control and has
a duration of about 10 days followed by a few days of maceration and 18 months
aged in traditional large barrels.

Cellar

Born into a family of artists, after studying at the Academy of Fine Arts in Florence, in 2000 Bibi Graetz took over the family vineyards around Vincigliata Castle on the hills of Florence. From just a few barriques of Sangiovese, Colorino, and Canaiolo, his most iconic wines: Testamatta and Colore are born. His artistic background is clearly evident in the bottles, where the labels are paintings by Bibi. Vineyards well over 50 years old and at high altitude, the choice of native grape varieties, and the commitment to a natural approach in the cellar are the cornerstones of Bibi's vision, with a focus on organic and sustainable viticulture. In 2019, the Bibi Graetz winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence, converted into a winery to host Testamatta and Colore, as well as Bibi and his family.
