Maschio dei Cavalieri sparkling wines are made from grapes that express the true "heart" of this production area: the Glera used for Prosecco DOC and Prosecco DOCG, the Incrocio Manzoni in two interesting varieties, with a curious history and fascinating flavor, Pinot Grigio, Bianco, and Nero, as well as the vibrant red Raboso. At the heart of a Maschio dei Cavalieri bottle are thousands of fine, light bubbles, born from meticulous and precise production and sparkling winemaking techniques. In the cellars, sparkling wines aren't created with the traditional double fermentation: for Maschio dei Cavalieri, just one is enough! In fact, there's a strict rule: work with musts, not wines, because only in this way can the freshness and fragrance of the grape juice be preserved. Thanks to the cold, their greatest ally, the musts are clarified, refrigerated, and immediately stored at a controlled temperature. From here, the life of the sparkling wine begins, and once ready, it moves on to the next stage: bottling.
