Description

It is produced according to the so-called méthode champenoise, or classic method, a method in which the wine essentially undergoes two different fermentations: the first, the alcoholic one (which it shares with other wines), takes place in fermentation vats; the second, however, occurs directly in the bottle, and during this second process, thanks to special yeasts, the wine also develops carbon dioxide (which, when uncorked, gives rise to the famous bubbles). A "good" percentage of reserve wines is used, amounting to approximately 20-35% of the wines that make up the cuvée.

The pale golden hue and fine bubbles make our flagship Classic Cuvee Multi-Vintage the ideal drink for any occasion, whether toasting a special birthday or simply capping off a busy week. After extensive aging in our cellar (typically over three years), our Classic Cuvee Multi-Vintage reveals distinctive toasted and spicy aromas. A palate of honey, almond, pastry, and baked apples lends a hint of decadence. Intense yet delicate, elegant yet complex: it's no wonder it's consistently crowned one of England's finest sparkling wines.

Cellar

Our vineyards share similar characteristics with the world's finest sparkling wine vineyards. The sandy, calcareous soils allow our vines, at each of our separate sites, to thrive throughout southern England. The climate here allows for a slow ripening of our grapes, enabling us to achieve optimal levels of ripeness and acidity, as well as the complexity and finesse for which our exquisite wines are renowned.

Using only estate-grown grapes from our own vineyards ensures that only the finest fruit is used to produce Nyetimber wines acclaimed worldwide. Our head winemaker, Cherie Spriggs, and her husband, winemaker Brad Greatrix, individually evaluate each hand-picked vineyard, from selecting the optimal time to harvest the grapes and overseeing their gentle pressing to final vinification. This meticulous attention to detail allows us to make the most informed blending decisions the following spring.

We produce all our wines at Nyetimber using the traditional method, aging them for extended periods of time to create complexity and flavor and allowing generous time after disgorgement before release.
