Production method
The rums are all produced without added sugar, caramel, artificial ingredients, or accelerants. They are distilled using the continuous multi-column method, according to Spanish tradition, up to five times with 100% renewable energy. All stages of the production process have been overseen by the same family since 1890. This is known as "5-Star Authenticity." The aging process takes place strictly in a tropical climate, specifically at the base of the San Cristobal volcano in "Almacen," at approximately 26°-28°C. This is controlled not mechanically, but by lining the roof with heat-insulating material and by trees outside, which provide shade for the bodegas.
