Description

The grapes are harvested manually between mid-September and mid-October, as per tradition. Fermentation occurs through the addition of selected yeasts in traditional concrete vats, for 10-12 days at a low temperature until the sugars are completely consumed. After resting for 40-50 days during which it clarifies naturally, Berganorio is ready for bottling.
