Damoiseau displays its savoir faire in the creation of Rum Vieux Agricole XO: a distillate composed of craftsmanship, patience and that dose of creative madness that has accompanied the company since its foundation in 1942.
Damoiseau Vieux Agricole XO Rum is made from pure sugarcane juice grown in the Grande Terre region, where the company is the only distillery on the island of Guadeloupe, one of the many islands in the Antilles archipelago. The sugarcane matures in the limestone-rich soil over the long period between January and July. Once harvested, it is shredded in two special grinders that break the fibers of the stalks, then frayed and finally crushed in four mills. The vesou, the precious sugar-rich juice, is constantly recovered throughout these operations and poured into a single tank to be filtered before fermentation, via the addition of yeast. The heart of the process is distillation, which still takes place in old continuous columns, with a system for filtering the oils contained in the steam. The spirit emerges at approximately 89% ABV and is pumped into stainless steel tanks where it is blended with osmotic water until it reaches an ABV of around 42%. It then ages for several months, beginning to develop its own bouquet. The blend of rums produced using this artisanal system and aged for at least four years is then placed in small 180-liter oak barrels that previously held bourbon whiskey, to proceed to a lengthy six-year aging process.
