Valentino Butussi Chardonnay Doc Cl 75 wine

The land on which the vineyards stand has a hilly bottom, made up of stratified marls and sandstones in
depth and colluvial on the surface.
The harvest is carried out manually, the harvest time is assessed visually when the grapes reach optimal ripeness, which in this vineyard occurs between the first and second ten days of September.

The grape is separated from the stalk and left in contact with the skins for 12 hours of maceration. It is then gently pressed to extract the must, which is immediately cooled to 10-12°C for natural static clarification. The free-run must is separated from the less noble parts and sent to traditional oak vats where fermentation and subsequent aging take place until spring.

6-8 months in 60HL and 7HL oak barrels and 2-4 months in bottle before being released for sale.
