Description

100% Viognier. White wine vinification with grapes harvested in two stages: the first at optimal ripeness to preserve good acidity and thus highlight the varietal characteristics. The second stage occurs when the grapes are very ripe (slightly overripe). These grapes undergo a brief cryomaceration (cold maceration) at 7-8°C for 8-10 hours. In the latter case, a soft and slow pressing follows. Fermentation begins spontaneously and continues for approximately 10 days at a temperature of 17-18°C. The wine is aged in stainless steel tanks on its lees until the following spring at a low temperature (8-10°C) to prevent malolactic fermentation. Bottling takes place at the end of March.

Tasting notes

Bright yellow in color.
On the nose, very clear floral notes of white rose petals, lime, acacia and broom.
In the mouth there are very pronounced fruity sensations of peach and apricot.
Together they produce a great aromatic sweetness perfectly balanced by good freshness and persistent minerality.

Cellar

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino area in Le Ferriere, in the municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

Compared to other areas of Lazio and other regions of Italy, this territory represented an environment waiting to be explored from a winemaking perspective.
For this reason, in 1985 the “Casale del Giglio” research and development project was launched, authorized by the Lazio Region's Department of Agriculture.

The viticultural models that inspired this research are those practiced in Bordeaux, Australia, and California, which are territories exposed to the influence of the coast, just like the Agro Pontino, which benefits from the influence of the Tyrrhenian Sea.
According to Casale del Giglio's philosophy, "the future development of Italian viticulture lies not only in strengthening the image of areas with a great tradition, but also in achieving, through appropriate viticultural and oenological choices, high-quality production, characterized by the right quality-price ratio, in territories still little known in terms of their viticultural and oenological quality potential."

The results of this research were validated by the European Community with the authorization for the cultivation in the province of Latina, starting in 1990, of new recommended grape varieties such as Chardonnay, Sauvignon, Syrah, Petit Verdot, Cabernet Sauvignon and, subsequently, others.
To date, Casale del Giglio has converted all 180 hectares of vineyards to row-pruning and introduced new varieties characterized by a high degree of qualitative interaction with the territory.
