Description

The grapes are hand-harvested into crates at the end of September. Destemming occurs, followed by fermentation in stainless steel with indigenous yeasts at a controlled temperature (20°C), and maceration on the skins for up to twenty days, depending on the vintage. Aged on the lees for at least 12-18 months, followed by a period of maturation and maturation, followed by malolactic fermentation and stabilization. Bottling is carried out unfiltered after three years. Depending on the wine's natural evolution, partial maturation may take place in used Slavonian oak barriques, followed by unfiltered bottling after two years. Aged in bottle for at least one year.

Straw yellow in colour tending towards golden.
On the nose, aromas of Mediterranean scrub. The palate is dry and full-bodied, intensely fruity, with crisp mineral notes.
Excellent as an aperitif. Tagliatelle with truffle. It pairs naturally with seafood, sauces, and pasta dishes.

The cellar's living karst rock walls reveal millions of years of geology, dotted with fossils and minerals. Let the dance begin... In this place, from the grapes of our vineyard, Castello di Rubbia wines are born: they find their identity in the slow flow of maceration and spontaneous fermentation, which can last for months. In the silence of long aging on the lees, they find their own identity, each at its own pace, seeking stability, or balance, the first axiom for a wine about to embark on its new life in the bottle, without the need for filtration. This period varies from 2 to 5 years before it is presented and made available to the public. "Art needs art": in the meantime, the cellar comes alive with musical events, favoring local folk (choral), classical, jazz, and blues. There is no age limit; our concerts bring children and adults together, united by a love of music, in the "rhythm of life."
