Description

The name chosen for this geographical unit derives from the
historical name "Buchholz" (Pochi), for the slopes of the valley above Salorno in the South Tyrolean plain, already documented in the historical cartography of the 1858 land registry.
This characterful wine comes from selected vineyards in this terraced area of ​​dolomitic sedimentary rock, at an altitude between 400 and 800 metres above sea level.

The temperature in the higher areas is about 6°C lower than in the valley floor. From April to October, there are constant air movements of two degrees Celsius.

To emphasize the wine's fruity character, the grapes macerate with their skins for several hours before pressing. Alcoholic fermentation takes place with pure yeasts at a controlled temperature of 19°C in large wooden barrels.

Meticulous care of the vines and the surrounding vegetation, combined with rigorous selection, are the fundamental and essential prerequisites for the authenticity of the wines. After harvest, the grapes are transported to the cellar, where they are always processed with the utmost respect for nature. Maturation on fine lees gives our wines balance and structure. The special Crus mature in large and small oak barrels, producing the finest wines. Peter Zemmer is committed to ensuring that his authentic wines reflect their original character as closely as possible and fully express the specificity of a unique and extraordinary terroir. The fascinating blend of tradition and innovation, man and nature, sensitivity and sensuality, fully expresses the passion and delicacy with which Peter Zemmer imbues his wines with a life of their own.
