London Dry Gin is a consistent balance of juniper, coriander, lemon, and orange peel (vital in the creation of this traditional style). Orris root, cinnamon, cassia bark, and nutmeg lend dry characteristics and add depth of flavor. The history of Hayman Gin distillation begins in 1863 when James Burrough, a charismatic London pharmacist, opened a small distillery on Cale Street, Chelsea. He experimented with a series of gin recipes, giving them names like Burrough's, Olde Chelsey, Beefeater, and Black Cat. At the time, the preferred London gin was Old Tom Gin, but James was busy experimenting with a drier style we now know as London Dry Gin. James was Christopher Hayman's great-grandfather, and the Hayman family has been distilling gin ever since. A major turning point came in 1987, when the family business was sold. Christopher, disappointed, promptly bought back part of the business so he could continue the family's gin distilling journey. Today, Hayman's is based in Balham, southwest London, just a few miles from the original family distillery in Chelsea. Christopher's children, James and Miranda, now run Hayman's, sharing the same passion and affection for gin.
