Description

Syrah (85%) and Petit Verdot (15%)*. The grapes for both varieties are harvested when perfectly ripe, sometimes slightly raisined for the Syrah. The vinification process involves different techniques for the two grape varieties. The Syrah ferments with indigenous yeasts using the submerged cap technique for a period of 18–20 days, during which periodic “délestage” takes place, especially in the initial stages. The Syrah thus gives the Mater Matuta complexity and character, with sweet tannins and intense aromas of morello cherry and spice. For the Petit Verdot, on the other hand, the vinification takes place using punching down tanks that allow for maximum extraction of tannins and polyphenolic substances. The result is a Petit Verdot with great body and structure that is well-suited to long aging. After careful racking, where the pomace is moved only by gravity, the wines are placed separately in new barriques for 22–24 months. This is followed by a further refinement of 10–12 months in the bottle.

Dark ruby ​​in colour, very dense.
On the nose, balsamic hints stand out, followed by dark coffee beans, violets and ripe morello cherries.
Finally, a strong spiciness of coriander, nutmeg and cinnamon emerges.
A mouthfeel that envelops and seduces thanks to a perfect tannic texture and a well-integrated freshness.

Cellar

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino area in Le Ferriere, in the municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

Compared to other areas of Lazio and other regions of Italy, this territory represented an environment waiting to be explored from a winemaking perspective.
For this reason, in 1985 the “Casale del Giglio” research and development project was launched, authorized by the Lazio Region's Department of Agriculture.

The viticultural models that inspired this research are those practiced in Bordeaux, Australia, and California, which are territories exposed to the influence of the coast, just like the Agro Pontino, which benefits from the influence of the Tyrrhenian Sea.
According to Casale del Giglio's philosophy, "the future development of Italian viticulture lies not only in strengthening the image of areas with a great tradition, but also in achieving, through appropriate viticultural and oenological choices, high-quality production, characterized by the right quality-price ratio, in territories still little known in terms of their viticultural and oenological quality potential."

The results of this research were validated by the European Community with the authorization for the cultivation in the province of Latina, starting in 1990, of new recommended grape varieties such as Chardonnay, Sauvignon, Syrah, Petit Verdot, Cabernet Sauvignon and, subsequently, others.
To date, Casale del Giglio has converted all 180 hectares of vineyards to row-pruning and introduced new varieties characterized by a high degree of qualitative interaction with the territory.
