Description

This is a pure Merlot obtained, depending on the vintage, with different winemaking techniques to ensure consistent quality. Vinification can be done in the traditional red wine style with pumping over and délestage to oxygenate the fermenting must, promoting greater stability of color and tannins, making them soft and velvety. Alternatively, using the submerged cap technique, longer macerations (15–20 days) can be performed, thus obtaining wines with greater structure and longevity. After careful racking, where the draining pomace is moved only by gravity, the new wine is transferred to stainless steel tanks where it undergoes malolactic fermentation. It then ages in small oak barrels for 8–12 months and is refined in bottle for approximately 180 days.

Intense ruby ​​red in colour.
On the nose, a scent of small red fruits and cherries, with typical herbaceous sensations that are found on the palate, highlighting structure and softness.

Cellar

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino area in Le Ferriere, in the municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

Compared to other areas of Lazio and other Italian regions, this area represented an environment waiting to be explored from a winemaking perspective.
For this reason, in 1985 the “Casale del Giglio” research and development project was launched, authorized by the Lazio Region's Department of Agriculture.

The viticultural models that inspired this research are those practiced in Bordeaux, Australia, and California, which are territories exposed to the influence of the coast, just like the Agro Pontino, which benefits from the influence of the Tyrrhenian Sea.
According to Casale del Giglio's philosophy, "the future development of Italian viticulture lies not only in strengthening the image of areas with a great tradition, but also in achieving, through appropriate viticultural and oenological choices, high-quality production, characterized by the right quality-price ratio, in territories still little known in terms of their viticultural and oenological quality potential."

The results of this research were validated by the European Community with the authorization for the cultivation in the province of Latina, starting in 1990, of new recommended grape varieties such as Chardonnay, Sauvignon, Syrah, Petit Verdot, Cabernet Sauvignon and, subsequently, others.
To date, Casale del Giglio has converted all 180 hectares of vineyards to row-pruning and introduced new varieties characterized by a high degree of qualitative interaction with the territory.
