Description

Soft pressing of the grapes. Immediate separation of the skins. Cold static decantation to purify the must. Alcoholic fermentation at a controlled temperature (max. 18°C) in stainless steel. Fermentation is stopped with the aid of cold at the desired sugar content.

Cellar

The winery is located in the hills of Orvieto, in Canale, an area renowned among locals for its fertile slopes, ideal for viticulture. It covers approximately 70 hectares, carefully cultivated with olive groves, arable land, and vineyards. Of the 37 hectares dedicated to grape cultivation, at least half produces grapes classified as DOC Orvieto Classico, while the remainder is dedicated to the production of Sangiovese and other high-quality non-native varietals such as Chardonnay, Sauvignon Blanc, Merlot, Cabernet Sauvignon, and Cabernet Franc, all derived from careful clonal selections.
The cellar was built in 2003 on a natural terrace overlooking the cliff and the Duomo, from which the cobblestones and roof trusses were "borrowed," almost as if seeking a direct connection with the city. Upon entering the store, an antique piece of furniture serves as a backdrop to the display of our products. Going upstairs, into the large tasting room, two terraces open up: one outdoor with a panoramic view, the other indoor, overlooking the heart of the company's production. Here, alongside computers monitoring sophisticated winemaking equipment, we find wooden barrels for aging wines and men crafting an ancient product with modern methods, admirably combining technology and tradition.
