Description

The grapes are harvested at an early stage of ripeness, preserving their freshness and aromas. After careful selection, the grapes are soft-pressed, separating the free-run must from the skins. Fermentation, slow but continuous, takes place at a controlled temperature and lasts approximately 7-8 days. After the usual racking, the new wine completes its maturation process in tanks and is bottled at the beginning of the year.

Tasting notes

Straw yellow in colour, very bright.
On the nose it is of notable intensity and persistence, slightly aromatic, citrusy and mineral.
On the palate it is dry, elegant and with a good taste-olfactory correspondence, with good minerality, savoury, long on the finish.

Cellar

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino area in Le Ferriere, in the municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

Compared to other areas of Lazio and other regions of Italy, this territory represented an environment waiting to be explored from a winemaking perspective.
For this reason, in 1985 the “Casale del Giglio” research and development project was launched, authorized by the Lazio Region's Department of Agriculture.

The viticultural models that inspired this research are those practiced in Bordeaux, Australia, and California, which are territories exposed to the influence of the coast, just like the Agro Pontino, which benefits from the influence of the Tyrrhenian Sea.
According to Casale del Giglio's philosophy, "the future development of Italian viticulture lies not only in strengthening the image of areas with a great tradition, but also in achieving, through appropriate viticultural and oenological choices, high-quality production, characterized by the right quality-price ratio, in territories still little known in terms of their viticultural and oenological quality potential."

The results of this research were validated by the European Community with the authorization for the cultivation in the province of Latina, starting in 1990, of new recommended grape varieties such as Chardonnay, Sauvignon, Syrah, Petit Verdot, Cabernet Sauvignon and, subsequently, others.
To date, Casale del Giglio has converted all 180 hectares of vineyards to row-pruning and introduced new varieties characterized by a high degree of qualitative interaction with the territory.
