Description

100% Sauvignon. It is usually harvested in early September to preserve the grapes' good acidity, ensure proper ripening, and avoid the development of excessive vegetal aromas. After careful, gentle pressing and meticulous selection of the free-run must, alcoholic fermentation is induced very quickly to preserve all the varietal's typical aromatic characteristics. Once this phase is complete, the temperature of the new wine is reduced to around 8°C to prevent the onset of malolactic fermentation. The necessary racking and bottling follow, scheduled for January/February.

Bright straw yellow in colour.
On the nose an intense and fragrant aroma, with hints of sage and nettle.
Fresh taste in the mouth, very mineral flint, good structure.

Cellar

Casale del Giglio was founded in 1967 by Dr. Berardino Santarelli, originally from Amatrice, and is located in the Agro Pontino area in Le Ferriere, in the municipality of Aprilia, in the province of Latina, about 50 km south of Rome.

Compared to other areas of Lazio and other regions of Italy, this territory represented an environment waiting to be explored from a winemaking perspective.
For this reason, in 1985 the “Casale del Giglio” research and development project was launched, authorized by the Lazio Region's Department of Agriculture.

The viticultural models that inspired this research are those practiced in Bordeaux, Australia, and California, which are territories exposed to the influence of the coast, just like the Agro Pontino, which benefits from the influence of the Tyrrhenian Sea.
According to Casale del Giglio's philosophy, "the future development of Italian viticulture lies not only in strengthening the image of areas with a great tradition, but also in achieving, through appropriate viticultural and oenological choices, high-quality production, characterized by the right quality-price ratio, in territories still little known in terms of their viticultural and oenological quality potential."

The results of this research were validated by the European Community with the authorization for the cultivation in the province of Latina, starting in 1990, of new recommended grape varieties such as Chardonnay, Sauvignon, Syrah, Petit Verdot, Cabernet Sauvignon and, subsequently, others.
To date, Casale del Giglio has converted all 180 hectares of vineyards to row-pruning and introduced new varieties characterized by a high degree of qualitative interaction with the territory.
